Tuesdays with Dorie: Coconut Tea Cake

These little cakes were a nice break from the super rich selections we've had the rest of the month. In the recipe Dorie calls for a bundt or Kugelhopf pan but I used a muffin pan and mini-loaf pans to make sharing easier. I also topped them with a little toasted coconut. I didn't find the coconut flavor very prominent, I think maybe the batter could have used another kick of coconut. It's still a good cake just not really coconut-y. The coconut was definitely subtle! Love the minis, too. Always easier to share the love.

Yep I have to agree with you on the coconut flavoring, or should I say lack of it. I was hoping for a real moist coconut flavored cake. Instead I got a dry OK tasting one. I love your cupcakes and the coconut on top looks great!

Mine is in the oven right now. I added about 1/2 teaspoon of coconut extract as well as the rum and vanilla. Just took it out of the oven and it smells divine. Your muffins and mini loaves look great!

I love your cupcakes, and I'm jealous of the pretty coconut shavings, too. I made the mocha bundt this week because I was out of coconut milk, so I'm loving reading the coconut tea cake blogs for ideas about this cake. It looks splendid.

Funny - I always add coconut oil or extract - I don't believe recipes actually have enough "kick" - these look fantastic - truly! And I'm jealous that your garden is sprouting... after today's light snowfall, maybe that mean lettuce planting!
